Copper River Coho Featured In Two New Simple Recipes for Fall

Cordova, Alaska—

Simplicity Shines with Copper River salmon continues as the harvest shifts towards Fall and fishermen welcome the last great salmon of the season-Copper River Coho.

Typically averaging about 12 pounds per fish, Coho are milder in flavor, lighter in color and texture than both Kings and Sockeyes. These large fish, sometimes called Silvers, are the last to return to the Copper River Delta and are a seasonal celebration amongst salmon lovers because they straddle the summer/autumn seasonal nicely. They are great smoked or grilled and they also work beautifully baked or roasted and paired with autumn specialties such as wild mushrooms, woody herbs, tart cranberries, sturdy cold weather greens, and robust root vegetables.

Overall, this fishery is smaller than the Copper River King and Sockeye fishery as the weather patterns rapidly shift and become more unpredictable at this time of year. That said, the fish generally arrive late August and into late September.

Executive Director Christa Hoover explains, “We love Copper River Coho season with the arrival of seasonal Autumn ingredients such as wild mushrooms, aromatic herbs, earthy lentils, and comforting accompaniments such smooth root vegetable purees.” With that in mind Hoover is pleased to announce two new recipes: A super quick kid friendly salmon slider just in time for back-to-school meals, and an easy but elegant entrée featuring Pan Roasted Copper River Coho and Wild Mushrooms.

Copper River Coho can be found fresh in season and frozen in the off season. A 7-ounce serving has 300 calories, 10 grams fat, 50 grams of protein and 2250 Mg of Omega 3 Fatty Acids.
